Since my legs have been a little useless, I have found a few easy and flavorful dishes to prepare. These are all quick and easy. I promise you can do it too.
Apple Pie Oatmeal
It really isn’t apple pie, but it’s a good name for breakfast. I came up with this one when I wanted to use up some homemade applesauce and not let it go to waste. I made normal oatmeal and topped it with the applesauce, and you get apple pie oatmeal.

Ingredients:
- 1/4 C Scottish Oats (use whatever oats you have)
- 3/4 C water
- 1/4 C almond milk
- 1 tsp cinnamon
- dash of salt
- 2 T raisins
- 1/2 mashed banana
- 1 tsp chia seeds
- leftover applesauce on top
if you have Apple Pie Spice, you could add that in place of cinnamon.
Asian Glazed Brussels Sprouts
This recipe was adapted from Emily at The FrontBurner. Her recipes are beautiful, vegetarian, and sometimes quite time consuming or detailed. But she also has simple ones like pan sauteed brussels sprouts. I have always roasted my sprouts in the oven, so I tried her way.
The ingredients are brussels sprouts, soy sauce, rice wine vinegar, and sesame seed oil. When I was at the grocery, I absentmindedly grabbed red wine vinegar instead of rice wine vinegar (doh!). So I subbed teriyaki for that one.
I served with brown rice (from Uncle Ben’s 90 second variety) and a can of baked beans. Talk about an easy dinner or lunch.
The brussels sprouts were soft but still had a bite, but I think one of the sauces caused a slightly bitter taste when it burns. Just make sure you don’t overcook.
I love easy recipes.

3 Ingredient Chocolate Bark
Only I could mess up the easiest recipe I have ever tried. It took me three tries to get this right. The recipe was from Jessica at How Sweet Eats.
You melt dark chocolate and freeze it. Then white chocolate and pour it on top and put sprinkles on, then freeze again. Then you break into pieces.
I mean how easy is that?
Jessica also added 1 tsp of yellow cake mix to the white chocolate. I did it too because she swore it made a difference in taste. I didn’t get it. I also used milk chocolate and white chocolate morsels because Lindt white chocolate became too expensive for three rounds.
Melting white chocolate is quite tempermental, and I discovered in my science project that using a double boiler works best. I tried the microwave (burned it and it smells bad). Then the stovetop, only slightly overcooked I think but salvagable. Then after another trip to buy more white chocolate, I got it right with a makeshift double boiler of a large glass bowl over simmering water in a pot.
The first picture below is the second batch I tried, and the bottom picture was the best trial.








All of these look GREAT and I’ll have to try them, especially the brussel sprouts
I almost always add a banana to my oats but chunky cinnamon apple sauce sounds delicious. I’m determined to make some peppermint bark this year. Your dinner looks right up my alley – I love a green veggie, bean and whole grain dinner.
