
I should have warned you that February was going to start out with desserts. It’s Super Bowl week, and it’s even in my home town! But I don’t have dips and wings and sharing appetizers to show you. Because I just don’t care much for the Super Bowl.
Instead, how about some pie. Cookies. Healthy nutty snack? We’ll see what else this week brings too.
How about some loaded oatmeal raisin cookies for today?
Oatmeal raisin cookies are a very special thing. Old fashioned oats with raisins so plump make for a delicious cookie. Freeze them and they’ll last a long time. And because they have oats + raisins, it doesn’t seem so bad.
These cookies are oatmeal raisin cookies on steroids, stuffed with dried cranberries and chocolate chips and pecans. What? They still have oats + raisins so they aren’t so bad.

Loaded Oatmeal Raisin Cookies
Based on recipe by Eat Live Run
Ingredients:
- 1 3/4 C old fashioned oats
- 3/4 C all purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 C packed brown sugar
- 1 egg
- 1 stick butter, softened
- 2 tsp vanilla extract
- 1/3 C chopped pecans
- 1/2 C chocolate chips
- 1/3 C dried cranberries
- 1/4 C raisins
- 2 T flax meal (optional)
Instructions:
- Preheat oven to 375*. In a medium bowl, stir together oats, flour, salt, baking soda, cinnamon, pecans, cranberries, and chocolate chips.
- In a separate bowl, cream together the brown sugar and butter. Add an egg and vanilla and beat again. Add the dry ingredients and beat until combined.
- Scoop out dough onto baking sheet. Bake for 10 minutes or until golden brown.

Those look SO good! Now I really want cookies…I like to make oatmeal cookies with dark chocolate chunks, dried cherries, and coconut flakes! Loaded is the best way!
