In the kitchen

Remember when I used to post new recipes and pretty pictures of food everyday? Gosh, I used to have more time and less responsibilities. If you were wondering if we ever eat at home anymore, the answer is yes. Many of the meals aren’t “blogworthy,” meaning they aren’t that exciting or look pretty on camera in my opinion.

We have managed to get into a little groove of cooking if we plan ahead, especially now that Logan is easier to get to sleep at night. Jeffrey and I even eat at the same time! Together! However, we don’t cook at home as often as I’d like.

I am sure now that I am back to work, it will take even more planning ahead to get home-cooked meals on the table, even if they are simple. We did end up buying a slow cooker cookbook and tagged a lot of recipes to try. Hopefully we will give that a try and actually like the dishes. My goal is to roughly plan the week over the weekend so I can grocery shop on Sundays and not have to pick up as many times during the week or be at a loss of what’s for dinner each weeknight.

The other challenge is lunch. Lunch is my least favorite meal of the day, and now at work, I have to go back to packing it. Yuck, smelly tupperware and boring salads. I dread packing lunches. At home for the past five months, I have eaten either leftovers from dinner, or open-faced sandwiches like the one above with hummus, avocado and cheese. I see many of these and PBJ’s in my future.

No real point to this post, just letting you know that we are cooking and hope to get better at it too!

  1. It get easier with working and the baby…the key is prep! Let’s swap ideas. We have a slow cooker and I havent been too too impressed with what we have tried, but there are a few winners. My biggest challenge is trying to eat clean/healthy but come up with something fast to get on the table. It gets more complicated when you have to feed a toddler, too!
