Picky Bars Giveaway!

When I was at a press conference for the Houston Marathon at the end of January, one of the female runners gave a plug to Picky Bars. Stephanie Rothstein came in third place at the Houston Marathon with an unbelievable time under 2:30, 10 minutes faster than her marathon PR. I really liked her running story because she was benched from running last year and couldn’t figure out what was wrong with her body. She realized she had Celiac Disease and cut gluten from her diet. In the meantime of not running, she and Lauren Fleshman grew their Bar business into something marketable. I just really like stories like that.

I contacted Picky Bars to see if they’d let me host a giveaway for them, and here we are.

Picky Bars are the perfect ratio for athletes on the go with the 4:1 Carb to Protein ratio. They are under 200 calories, are gluten and dairy free, and full of “real” ingredients including chocolate chip morsels. Check out their Nutrition page for the details.

There are three flavors right now (two are unnamed and you can name them on their homepage!) and the winner of this giveaway will receive a pack of Picky Bars.

I thought the Picky Bars were really, really delicious. They are a consistency of a Larabar, but thinner and much better tasting. Larabars are so dense and chewy and have very strong nutty flavors and I usually only eat them half at a time. These are a small and mighty bar but would be great when you need fast fuel before or after a workout. And they are perfect for athletes with that ratio all figured out.

Latkes and Lights

The Dallas Run the Rock Half Marathon is on Sunday! I am super excited and nervous and just ready to do it. I have been doing a lot of yoga, CrossFit, spinning, and not running since my IT Band spazzed out. It has kept me pretty relaxed since I don’t have last minute leg pains. We’ll see what happens on Sunday. Your kind words and encouragement have been so great.

It’s Hanukkah which means latkes and menorahs. And this year a half marathon sprinkled in? Ok, why not.

This year, we are celebrating with our families later in the week, so for the beginning, I didn’t want to make latkes. If you aren’t familiar with frying potato pancakes, it is a lot of work with lots of peeling, oil flying, and your house smells like fried potatoes for days. Not saying that’s a bad thing.

Regardless, this year we tried Linda’s Gourmet Latkes, named by Oprah’s Favorite Things as her favorite potato pancake. These little boxes are $8 per container! We had the original (150 calories per latke) and sweet potato (80 calories). It also comes in green onion flavor. Our review is that we thought they were tasty, but not extraordinary. And not worth over $1 per latke. I guess for one or two nights a year, we should make our own.

However, you pay for convenience with these so you don’t have to mess up your kitchen to get your latke fix.

And then we ate! I made homemade applesauce and you can too. I actually wanted to use store-bought, but when I opened the jar it was no good! I can’t eat a latke without applesauce, so I quickly diced an apple, sprinkled with cinnamon, brown sugar and lemon juice, added a little water, and zapped for about 3 minutes, stirring regularly.

Voila, the applesauce was perfect. Jeffrey approved too!

It was served with roasted green beans and carrots, following this recipe.

And chicken on a grill pan, marinated in whatever I thought looked good in the pantry.

Book Review: “Room” and Recipe Experimenting

I haven’t reviewed a book on the blog in a while! I guess this week I’m catching up on things I should be writing about. To view other books I’ve written about, click the tag cloud called “books.”

I just finished a book called Room by Emma Donoghue. I heard of this book a few months ago twice. Once I read that Jennifer Weiner said that this was one of the best books she’s read recently. I love Jennifer Weiner’s books, so I made a mental note. And then a day later, my sister had the book when I saw her in San Antonio. So I knew I needed to pick it up!

Room is about a 26-year-old woman and her 5-year-old son who are held captive in a man’s 11 foot x 11 foot backyard shed. The woman had been there for 7 years, kidnapped from her college, and her son was born in the shed to the captor “Old Nick.”

Jack is the boy, and he tells the story. He has never known life outside of Room, so his friends are things like Melty Spoon, Duvet, and Bed. It was really neat to read how he thinks of objects and proper nouns and gives them traits. (side note–while reading, I noticed that a yoga instructor I like also refers to body parts in the same way like “lift left foot in the air, place right hand on ground.”) Donoghue does an amazing job of telling the story through a child in a very eloquent way.

The parts of the book that took place in Room were most interesting to me. Jack’s mother taught him English, fed him, and they exercised by jumping, sprinting, and moving furniture. He never stepped foot in real daylight for his whole life. They got groceries and some toys or books from Old Nick on Sundays for “Sundaytreat.”

You’ll have to read the book to see if they escape and what happens. It was a great read.

Recipe Experimenting:

I tried two new create-your-own-recipes together one night for dinner. I wanted to make a broccoli crunch that usually uses mayonnaise, and I wanted to try baking tofu with a homemade marinade. Usually I cook tofu on the stovetop so I wanted to try it in the oven.

I used plain Greek yogurt in place of mayo in the broccoli crunch, but it still tasted like tangy yogurt.

Do you have any tips to make yogurt taste like mayo?

Broccoli Crunch

Ingredients (makes 2 servings):

  • 1 head broccoli
  • 3 T Plain Greek yogurt
  • 1/4 C pecans, chopped
  • 2 T black raisins
  • salt and pepper (about 1/4 tsp)

Instructions:

  • Steam one head of broccoli in microwave in a bowl with shallow water.
  • Drain and cut broccoli into bite sized pieces. Place back in bowl.
  • Add yogurt, raisins, pecans, salt and pepper and mix well.
  • Chill in refrigerator until ready to serve.

I definitely had the crunch. I liked the nuts and raisins. It looked pretty, but I just didn’t think the tang was right. Ideas?

Sweet and spicy baked tofu

Ingredients:

  • 1 block Extra Firm tofu
  • 3 T EVOO
  • 3 T honey
  • 1 T parsley
  • 1 tsp sesame oil (I had it on hand, not necessary)
  • 1/2 T black pepper
  • 1 tsp paprika
  • few shakes of red pepper flakes

Instructions:

  • Remove tofu from package, cut in six strips, wrap in towel, lay under something heavy for 15 minutes to press out moisture.
  • Combine all liquids in microwave safe bowl and zap for 35 seconds.
  • Spray a baking sheet with cooking spray and lay tofu on sheet. Spoon the mixture over the tofu on one side.

  • Bake at 375* for 30 minutes. Flip once at 15 minutes.

This was actually better the next day I thought. It crisped up and the marinade sunk in better. Out of the oven it was a little flimsy but cooked, and it looked pretty. I could definitely taste the honey, but it wasn’t very spicy. I would probably add chili powder.

I had it alongside half a sweet potato with margarine and cinnamon.

Cin Chili and a giveaway!

2. Cin Chili Two Ways

A few weeks ago, we bought a chili pack from a specialty store in Houston called Cin Chili. Cindy was on a Throwdown! with Bobby Flay episode a few years ago and she beat him with her chili! When I went to the Bobby Flay book signing in October, she was there too.

We cooked our chili exactly as the instructions said, and it was very easy. Jeffrey actually did all the work! It uses 2 pounds of ground turkey or beef (we used turkey), one 15 oz can of beef broth, one 8 ounce can of No Salt Added Tomato Sauce, and that’s it. We added one can of corn and let it all cook together.

I put mine over lettuce, and topped it with tomatoes and cheddar cheese.

Jeffrey ate his with onions, cheese, and Fritos.

I thought the turkey meat was very flavorful with a great spicy kick. Jeffrey loved it. I also thought it wasn’t very broth-y and instead seemed like very well seasoned turkey meat that went great on a salad. I guess I am used to a looser chili with some liquid in it. We definitely recommend it!

Define Mind Class:

Last week I tried a free Define Mind class at Lululemon. I have wanted to try free classes at Lululemon, but haven’t gotten around to planning for it. Define Body, a popular Houston studio that fuses pilates and yoga into their own “Define” style classes has intrigued me for a while, so I finally got to try. The Define Mind class I went to was relaxing and focused on stretching major muscle groups like quads, glutes, the spine, hamstrings, and shoulders. Hank, the owner and instructor of this class, was so kind, knowledgeable, and gorgeous (just had to throw that one out there)!

The hour long class used a rubber ball to roll around similar to how you would roll a foam roller over tight muscles. It was a familiar “hurt so good” sensation that really helped tight muscles.

He also played GREAT music during the class, including a lot of Dixie Chicks. If you’re in Houston, check out his original studio in the Tanglewood/Galleria area, or his new studio coming in the next month in River Oaks.

Clean out the Pantry Cookies:


These cookies didn’t really clean out the pantry, but I couldn’t think of an acceptable name for them. Oatmeal Banana Coconut Chocolate Chip Raisin Cookies was too long I thought.

This recipe was adapted from Anne P. at Fannetastic Food. They are more like chewies than cookies, and you can taste the ingredients, especially the banana and oats. Jeffrey was not a fan, but they satisfy the cookie need for me. They are soft and chewy and have a short list with things I always have in my house. No eggs, oil, butter, or sugar necessary! If you eat these for breakfast, I think it would be A-ok too.

Ingredients: makes about two dozen cookies

  • 1 C oats
  • 2/3 C whole wheat flour (*pastry flour is best, I don’t have any)
  • 1/2 C coconut
  • 1 T flax seeds (use ground glax if you have it, I’m still using up a bag of flax seeds)
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp sea salt
  • 2 mashed bananas
  • 1/4 C plain Greek yogurt
  • 1/4 C maple syrup
  • 1/2 C raisins and chocolate chips together, or choose just one
  • 1/2 tsp vanilla

My modification to this list was that I used vanilla Greek yogurt and left out the extra vanilla extract. I happen to have a container of Oikos Vanilla open so I used that instead of opening a new plain. Adapt to what you’ve got!

Instructions:

Combine wet in one bowl, combine dry in another. Add wet to dry and mix by hand or with hand mixer. Then add chocolate chips/raisins in after. Spoon onto baking sheet and use a Silpat if you’ve got them. Bake at 350* for 15 minutes. Enjoy!

Homemade Granola:

For my Sunday in the kitchen recipe, I made homemade granola for a friend who recently had a baby. If I were home all day for a long period of time, I think I’d want some healthy options to choose. And not just because I’m a healthy living blogger.

Ingredients:

2 1/2 C rolled oats

1/2 C slivered almonds

2 tsp cinnamon

1/2 tsp salt

1/2 C mixed dried fruit (I did craisins, raisins, and apricots)

1/2 C apple juice

1/3 C maple syrup

1/4 C brown sugar

1 tsp vanilla extract

1/4 C flax seeds

Instructions:

Preheat oven to 350 degrees. Combine dry ingredients in large bowl (oats, flax seeds, almonds, cinnamon, salt, dried fruit). Combine wet ingredients and brown sugar in mixing bowl or measuring cup (apple juice, brown sugar, vanilla, syrup) until sugar dissolves.

Pour wet onto dry and stir until combined.

Spray baking sheet with Pam and spread mix evenly.

Bake for 25 minutes, mixing around every 10. Let cool and package it, eat it hot, or add to yogurt, cottage cheese, or anything else that sounds good!
